Valentine’s Day in Good Health

With Valentine’s Day coming up hot and quick, I’ve noticed a holiday trend. Food. There are so many holidays and occasions that we celebrate and we all know that celebrations usually involve food. I’ve noticed, however, that too many of these celebrations quickly Valentines Day Campaignbecome food-focused, which can become a convenient segue into “cheat meals” or binging, but it doesn’t have to be that way!

I know that the Valentine’s Day dinner date is super popular, and for good reason. It’s a great way to spend time with your loved one away from the every-day rituals that can leave you feeling in a rut. You may have kids or pets that you could just use a night off from, to focus on each other. Treating yourselves to a special meal or heading back to a nostalgic restaurant are great ways to get in some quality time with each other. Going out to eat or celebrating an event doesn’t have to mean going off-plan or “cheating”, though. While there are plenty of healthy dinner options at most restaurant, the dessert menu is where weight-loss goals get derailed in a hurry. Don’t let yourself fall off the wagon over a heart-shaped restaurant dessert. We’ve got you!

Instead of feeling guilty after a few short-lived bites of chocolate, try our recipe for Paleo Chocolate Mousse! The best part (besides being gluten and dairy free) is that you can make it ahead of time so it’s ready for you when you get home from that special dinner! This is very similar to the one we have on our menu and it’s super easy to customize by adding your favorite fruit, nuts or shredded coconut to.

Chocolate Mousse Recipe

2 c coconut milk
3 egg yolk
3 oz dark chocolate
1/2 c honey
2 T coconut sugar
small pinch of salt
Combine coconut milk, honey, sugar and salt over medium heat and bring to a simmer.
In a separate bowl, whisk egg yolks until frothy.
Using a double boiler, melt chocolate.
Once the coconut milk is simmering, gently temper in the egg yolks by adding small increments of the hot mixture into the egg yolks while constantly whisking. Return the mixture to the stove and gently heat until it thickens, while continuing to whisk.
Pour mixture into 4 small ramekins and chill until set.
Enjoy with fresh berries, sliced almonds or toasted coconut.
