Oh yeah, we said it. We can actually make a carrot cake Paleo. And it is LEGIT! You can’t miss this dessert. Carrots, Pecans, and raisins are the highlights…but even more than that the icing is made from coconut milk and ghee. We had a big debate last time about whether this cake should have pineapple or not, I lost last time, but this time there WILL be pineapple in the cake.
