Chicken Saltimbocca
Saltimbocca is an Italian word meaning “Jump in your mouth”. This dish is originally a veal dish, but also adapts very well with chicken. The exact original ingredients vary by region, we are going to take chicken and marinate it in a little wine (Paleo) and olive oil, seared and cooked, and then top it with prosciutto, sage and capers. With a little side of garlic broccoli, I am very much looking forward to this.
