Chocolate Chicken Mole
So when I was researching mole there really is no known history for mole. It was never seen in history until about 1850. There are a million different varieties of mole, and in fact chocolate mole is not even the most common, even though it is the one we run into the most. The only staple ingredients are ancho peppers, but it really does seem like everything else changes. Typical mole has 20-30 ingredients, so there is no way a recipe like that can survive generations without off shoots and variants. The mole we are making is a little more simple with just onions, garlic, ghee, tomatoes, ancho peppers, almond butter and dark chocolate and finished with a little cinnamon and nutmeg. We will serve it with a side of plantain rice and a lime wedge. This is a dish for those that want to break from the ordinary and really have something chef inspired and unique.
