Emu Burgers with Herb Wine Sauce

We always want to do some things that maybe some people have not had. We figure for only $9.25, what a great way to try something new. Emu is the second largest bird in the world, native to Australia. They can go weeks without eating, and drinking. They also ingest stones, metal and glass to help with digestion. In the culinary world they are a lean red meat. We are going to make burgers, but because they are so lean, we are going mix it with ground beef. This will allow for more flavor and will help it not to be so tough. Served with braised cabbage and Bacon.
