Grilled Shark with Olive Tapenade and Giardiniera
Mako Shark is the fastest swimming shark in the ocean, swimming up to 30 mph. A mackerel shark is slightly sweeter than swordfish and is best cooked with just a little salt and pepper and a wedge of lemon. We are grilling it with some olive tapenade and Giriardiniera vegetables (pickled vegetables).
