Ham Cups with Roasted Sweet Potatoes
I like cupcakes. A lot! But what if you could make meat cupcakes? See where I am going with this? Ham-lined cupcake pans with eggs, baked to an over-medium. Then, if that wasn’t enough (there are two of them), we are doing some sweet potato hash. Sweet potatoes, caramelized onion, scallions, and parsley make this one mean breakfast!
