Jambalaya with Rice
Jambalaya is a dish we used to do back in the day. A house-made vegetable roux with bell peppers, onion,s and celery (trinity), then add in boneless dark meat chicken, house-made Andouille sausage, and little shrimp. This is a substantive, delicious mess all served over fluffy cauliflower rice.
