Porcini and Truffle Sausage Stuffed Peppers
I remember growing up and HATING stuffed peppers. Then as I got older, something changed and now I really do like them (don’t tell my mother). We are roasting red peppers and stuffing it full of porcini and thyme sausage. Then for a side dish, summer squash quickly sautéed with garlic and kale.
