Pork Loin Medallions
When I think of these, I think of something from a middle school lunch cafeteria. While in fact these are not, they are much better. The difference? These are made out of pork tenderloin that have been expertly seared to a perfect medium and served with a fennel and caper sauce made from shallots, parsley, diced tomatoes, white wine and capers. The side is spicy sautéed collard greens. I dare you to find that in a middle school!
