Posole

Posole is a traditional Mexican stew made with pork and chicken with lots of vegetable add-ins such as onions, carrots, chili peppers, cabbage and other vegetables that were seasonal at the time. We are topping ours with some pickled onions. Think amazing enchilada sauce, made into a soup. It will warm the cockles of your heart.
