Pozole Soup Topped with Cilantro Cabbage Slaw

Imagine if you had an enchilada in a soup (which sounds awesome.) This is pretty much this soup. Pozole was first mentioned in the book “General History of the Things of New Spain” by Fray Bernardino de Sahagún’s. It is typically made with maize and pork or chicken pork rinds and garnished with a cabbage slaw, carrots with the awesome red sauce. We are omitting the maize but everything is authentic as it comes. Moderately spicy.
