Smoked Brisket Stuffed Sweet Potatoes

Jumbo sweet potatoes cooked to perfection, split open and stuffed with slow smoked beef brisket and topped with roasted pecans and Paleo BBQ sauce. Paired with a mayo based coleslaw. Sweet and savory with a little pickled cabbage to make it extra delicious.
