Sockeye Parchment Salmon

Before I tell you about the dish, I want to tell you that we got some wild sockeye salmon from our fish purveyor. Sockeye salmon is also called red salmon or blueback salmon. Sockeye salmon is born in freshwater rivers around the Pacific Northwest then as they get older migrate into the ocean. When ordering this dish you will notice that the flavor is amazing and the salmon is a bit more red. So now about parchment salmon. Parchment salmon will have the sockeye Salmon filets with fresh dill, red onion and lemon all wrapped up with Zucchini, Carrots, Celery, Sweet Potatoes and drizzled with white wine in a little package and baked. This keeps everything juicy and allows the flavors to meld together.
